I am having a hard tome even following your thought process.
Don't follow my '~thought process~'; follow the Scriptures about Jesus' Last Passover AS THEY FOLLOW in chronological, logical, TEXTUAL sequence in all four Gospels TOGETHER. Nothing else, more or 'better' explains the '~3d/3n~' thing.

mark 14:1 happened on either Monday or Tuesday. Much of our discussion (including the phrase 3 days and 3 nights) comes from Matthew. So its better to stay with Matthew's account.

It's not '~better to stay with Matthew's account~' or any Gospel's account alone. The key and solution stay with reading them all together WHERE THEY ARE together in the Text and Time.

Read EVERY relevant Scripture in the last chapters of the four Gospels, in textual sequence put together in chronological and logical, historical order, word for word, verse by verse, context to context, using the King James Version interlinear with the Greek, and every shadow of doubt about Christ's perfect fulfilment of the Passover of Yahweh's "three days thick darkness" is dispelled sola Scriptura as per the Article of the Christian Confession of Faith, I believe in Christ, who was crucified, who died and was buried, and who “ROSE from the dead according to the Scriptures THE THIRD DAY”!

= John 12:27-36 27
νῦν ἡ ψυχή μου τετάρακται, καὶ τί εἴπω; Πάτερ, σῶσόν με
Now is my soul troubled; and what shall I say? Father, save me

ἐκ τῆς ὥρας ταύτης· ἀλλὰ διὰ τοῦτο ἦλθον
from this hour: but for this cause came I

εἰς τὴν ὥραν ταύτην. 28 Πάτερ, δόξασόν σου τὸ ὄνομα.
unto this hour. 28 Father, glorify thy name.

ἦλθεν οὖν φωνὴ ἐκ τοῦ οὐρανοῦ
Then came there a voice from heaven, saying,

Καὶ ἐδόξασα καὶ πάλιν δοξάσω.
I have both glorified it, and will glorify it again.

Jesus was saying passover is two days away... In the future. That passover was Thursday. Thus, Matt 26:2 as well as Mark 14:1 were either Monday or Tuesday.

In Matthew 26:2 the KJV is WRONG with "after two days is the __feast__ of the passover"; the word 'feast' is not in the Greek. The feast was the day they ATE the passover, not the day they KILLED the passover. Jesus spoke of "after two days the Son of man is betrayed to be crucified", the 14th and Sacrifice-day which was 2 days away or future; not the 15th and Eat "the flesh with ulb" Feast-day that the Son of Man would be BURIED on. "...they said, Not on the feast..."

But in Mark 14:1 the Jews connived, "After two days was the feast of the passover and of unleavened bread" - τὸ πάσχα καὶ τὰ ἄζυμα, or, more exact, "After two days the DAYS of unleavened bread will be(gin)".

Now the Feast was on the fifteenth of the month and was supposed to be eaten AFTER the day of the CRUCIFIXION AFTER sunset when it "was That Day great-day-of-sabbath ... which is the Fore-Sabbath and Preparation-day had begun after evening already had come" Mark 15:42 Matthew 27:57 John 19:31,38, "At The First Night" of ulb. John 19:39.

"That Same Day the Preparation" but ENDING from "being daylight mid-afternoon" three hours before sunset "the Sabbath nearing and the women had gone home and prepared sweet spices and ointments" Luke 23:54-56a, the Marys, after sunset, "began to rest the Sabbath according to the (Fourth) Commandment". Luke 23:56b.

You don't take into consideration that both days of Sacrifice and Feast were 'passover'. 'Passover' was not only the Feast; in fact the 'passover' was first of all the fourteenth day of the First Month, the day of the sacrifice and "preparation" for the passover-feast-day on the fifteenth of the First Month. Ezekiel 45:21 2Chronicles 35.

Then you against all facts of passover history and the Scripture record of it in both Old and New Testaments, just take for granted that Sacrifice was on Wednesday at least four or even five days before First Sheaf Wave Offering Before the LORD in the Resurrection of Jesus from the dead and grave.

Matt 26:2 coincided with Mark 14:1. You should not follow Matthew, then forsake 26:2 for Mark 14:1, then go back to Matthew.

Each of the gospels has unique occurances ommitted by the others. It is ok to fill in voids of the timeline. But not to replace existing ones (ammending yes, replacing, no).

No. It discusses when he was betrayed. Now if the betrayal happened when Satan entered Judas'a heart or when he kissed Jesus is a point of discussion. Clearly from reading the account its talking about when Judas kissed him, which happened early Wednesday morning. 3-5 AM. Before sunrise.
Matt 26:2 happened on Monday. But you said you closed your case.

Before sunrise.~'' But come on, it is clear as daylight you're taking advantage with claiming '~which happened early _Wednesday_ morning~'!

Jesus was speaking of when he would betrayed; not when he died. That should be easy to understand, even if they happened on the same day.

But the problem is that you still are failing to understand how idioms work. Not according to me, but according to jews. "After two days" is an idiom. "3 daya and 3 nights" is not.
