The origin of the curse was disobedience concerning the Tree of the Knowledge of Good and Evil. Would you say that in light of Galatians, the improper perspective on the Law and subsequent curse could be said to have come about from continued eating of the forbidden fruit?

Absolutely. As the study here that I wrote states -- and I frankly wouldn't do a study in something I don't believe myself -- the tree metaphor is often applied to humans, hence why it is said:
Proverbs 11:30The fruit of the righteous is a tree of life; and he that winneth souls is wise.
Christ being THE Tree of Life, and at the very same time, the Word made flesh, of which the law is part of the Word. Christ's whole life was about the fulfillment of that law (Matthew 5), but not the changing of it. Jesus did what he do so that you in I, in our imperfection, still have a chance. The law having been intended for this original purpose on its own.The dichotomy is the fruit of the righteous, or the fruit of the enemy. When you eat of the later (sin), the problem arises. You either bare good fruit, or bad fruit.
