IF the person was Saved; his soul is saved.
If the person was Not Saved; his soul will eventually be destroyed.

I am not so sure this is a cut and dry issue. There are many who have mental or emotional problems that could lead to, at least, attempted suicide. Only God knows the hearts and situations of people who do feel driven to take their own lives.
As far as 1st Corinthians 3:16 goes, I would say it goes hand in hand with what Paul says in 1 Corinthians 6:15-20 "Do you not know that your bodies are members of Christ? Shall I then take the members of Christ and make them members of a harlot? Certainly not! Or do you not know that he who is joined to a harlot is one body with her? For "The two," He says, "shall become one flesh." But he who is joined to the Lord is one spirit with Him. Flee sexual immorality. Every sin that a man does is outside the body, but he who commits sexual immorality sins against his own body. Or do you not know that your body is the temple of the Holy Spirit which is in you, which you have from God, and you are not your own? For you were bought at a price; therefore glorify God in you body and in your spirit, which are God's."

So if a Christian is saved by faith in Christ, but takes their own life.. they are still saved?
Because 1st Corinithians 3:16-17 doesn't justify this.. and I can't find anywhere in scripture that says if a believer is saved but then takes their own life they are still saved..

Welcome PWS. I'm sure you meant "soul", and no, God does not destroy souls (as in annihilate them).

"Destroy" in this verse means to destroy the body, either through disease or premature death (assuming the man is saved) -- To deliver such an one unto Satan for the destruction of the flesh, [body] that the spirit may be saved in the day of the Lord Jesus.(1 Cor 5:5)

To perish is a loss of well being, rather than a loss of being.

This passage is not about suicide. Only God knows who is saved and who is not, and even though suicide is a very grievous sin, those who have been saved were saved by grace through faith. Christians can and do sin, but that does not mean that they lose their salvation. However it affects their fellowship with God and Christ.

In this particular passage, God's "temple" refers to a church, not to an individual (the 'you' in verses 16,17 is plural). So it's talking about the serious consequences of damaging a church (by false teaching and suchlike), not suicide.

If a person was not truly converted, then s/he was never truly converted in the first place.

That is an old well worn response.
Can you give us a scripture verse or verses for this ? Thanks.

When God truly converts, a work in the heart begins and continues until the day of Jesus Christ.
