or should you also be regarded as persecuting Christ, if you persecute non-catholic believers?

Paul was persecutiunbg the Church, period - and there was only ONE.

The Church in Rome or in Ephesus or in Corinth or in Glatia, etc. was ALL the same Church.
ONE Church in different locations.
Today, we call tthem "Dioceses and "Parishes".

It's a very simple text:

"...and teaching them to obey all that I have commanded you. And surely I am with you always, even to the end of the age.” Matthew 28:20
I mean, we understand his command to teach others to obey his commands, and that he is continually in and with us by his Holy Spirit (Colossians 1:27). What is it that we are supposed to see that really isn't there?

A Protestant by definition are non-Catholic, non-Orthodox Christians. There are atheists and people of other religious affiliations that don't agree with thew Church who are not Protestants.
There are also many quasi-Christian sects that are not Protestant because they are not even Christian.

If a person calls himself a Protestant, then it is appropriate for another to use the same term about him.
You deciding what individuals are or are not, is irrelevant.
