    There are certain universal moral laws that are reiterated in the New Testament, stealing and adultery are among them. Jesus did many things on the sabbath that would have been unlawful under the old covenant (Mat 12 ), but we live under a new and better covenant.

    If we're going to keep the sabboth then we would have to keep all the other laws. But Christians have never followed the Old Testament laws, they were meant for Israel.

    Ultimately, it's a matter of the heart rather than any sort evidence or experience. Satan had full knowledge of God and still rebelled. We do have a part to play. God offers the pardon but it's up to us to take it or not.

    It may have been for more practical reasons as well. There's reasons to believe the climate was temperate year round before the flood. With the introduction of winter, it would have been more difficult for early humans to survive on plants alone.
