If you eat meat you are eating blood, unless you know of a certainty that every drop of blood was drained after butchering. Otherwise you are eating cooked blood... Unless of course you prefer rare steak.

Yes sir you are correct, but we do not have to worry about that. It may ease your conscience a bit if you see what Paul said: (1 Corinthians 10:25) 25 Eat whatever is sold in a meat market, making no inquiry because of your conscience,

Jehovah knows that some blood will remain from the time He gave us His permission to eat meat. Really it has more to do with respect for God's laws than the blood itself B.

Or, maybe it has all to do with a spiritual reality that doesn't even involve literally eating blood at all.

A person who has this knowledge can eat blood with a clear conscience because he knows it wasn't about actually eating blood. Just as he knows that sacrificing an animal for sin wasn't about actually sacrificing an animal for sin but instead pointed to the Sacrifice of Jesus for our sin.

Yes sir, I would agree. It is similar to the tree of knowledge that was forbidden, it had nothing to do with the fruit, rather what belonged to Jehovah. The blood as well belongs to Jehovah Gen 9:3-5, and He through His word has told us the proper usage of it.
