Why does the Sabbath start at sundown? especially in Israel, why is this so important?


This was established by canon 1246 of the 1917 Code of Canon Law. The ancient Jews reckoned days from sundown to sundown, meaning that for them the first part of the day was evening. This is why Genesis 1 says things like, “And there was evening, and there was morning–the first day” (Genesis 1:5).

Perhaps the following psalms speak to it. We may indeed start our way in darkness but then comes the Light:

Ps 30:5

For his anger endureth but a moment; in his favour is life: weeping may endure for a night, but joy cometh in the morning.

In the morning, joy! In the morning, the Light is seen!

Ps 18:28 For thou wilt light my candle: the LORD my God will enlighten my darkness.

If you ever visit it is apparent.

Israel has always had a vibrant nightlife in EVERY city because of the heat.

Sunrise takes hours as the sun is refracted across the dessert after breaking out over the Himalayan mountains....(yes that far)

Sunset is based on the sun and ocean so it happens faster.

I would say Because the BEGINNING of Gods KIND of habitat FOR particular KINDS of things…trees, plants, animals, man …their habitat Earth…began IN DARKNESS…
Beginning its FIRST DAY.

Importance to Israel, I would say Keeping remembrance of Gods Works, according to His Order and Way, as an Honor unto God.

Translational difficulties.
Hebrew is a metaphoric language.

Evening is also the word for "going into obscurity/chaos"
and
Morning is the Hebrew word for "becoming ordered/clear"

Which is why they are reverse order in Genesis. But it became part of the Torah/Law....and nobody treated the Law so lightly.
