One must first study and come to know and understand the calendar which is taught in the Torah, (that usually takes years for one who is not familiar with the Torah and the Sages and Rabbis surely cannot tell you). There is a Shabbat hour in each and every day of the year for as long as the earth and the world exist.

I learned all these things from the Testimony of the Meshiah in the Gospel accounts, especially John, and checking his words with the Torah at all times to see if he was expounding something from the Torah, (hint, very often he is doing just that). The sundial above simply explains the pattern, and once one learns the pattern the civil calendar day may begin at any time, depending on your sleep habits: there is no need for the light of the sun or the light of the moon in the new creation place where I am with Meshiah. Moreover we are commanded not the serve the sun, moon, or stars: not only not to worship them, but also not to serve them, just as the Pharisees serve the moon each and every new month of their erroneous lunisolar calendar. The primary Shabbat is the seventh yom-hour of every sacred calendar day, (while the civil calendar day is twelve hours, never twenty-four)..
Why does the 1st "day" start 2 1/2 hours in?

you ( @dak ) and @Jack have a good day in the Scriptures
Amen! Every day is a great day In The Scriptures!!:

Christians Not Under The Law? Totally agree:

for it is written, "Cursed is everyone who does not continue in all things which are written in the book of the law, to do them."
+
This Biblical Gem:

"Now the end of the commandment is charity out of a pure heart, and of a good conscience, and of faith unfeigned:
From which some having swerved have turned aside unto vain jangling; Desiring to be teachers of the law;
understanding neither what they say, nor whereof they affirm. But we know that the law is good, if a man use
it lawfully;

Knowing this, that the law is not made for a righteous man, but for the lawless and disobedient, for the
ungodly and for sinners, for unholy and profane, for murderers of fathers and murderers of mothers, for
manslayers, For whoremongers, for them that defile themselves with mankind, for menstealers, for liars,
for perjured persons, and if there be any other thing that is contrary to sound doctrine; According to
The Glorious Gospel of The Blessed God, Which was committed to my trust." (1 Timothy 1:5-11 AV)
Wait! What?!? Those desiring to be "teachers of the law" are admitting that they are Unrighteous? Surely they jest, eh?

FurtherMoreOver, will these teachings also be "wood, hay, and stubble" if a righteous christian desires to teach them?:

The Judgment Seat Of Christ:

"Now he that planteth and he that watereth are one: and every man shall
receive his own reward according to his own labour. For we are labourers
together with God: ye are God's husbandry, ye are God's building.

According to The Grace Of God Which Is Given Unto me, as a wise masterbuilder,
I have laid The Foundation, and another buildeth Thereon. But let every man take
heed how he buildeth Thereupon. For other foundation can no man lay than that
is laid, Which Is Jesus Christ.
Now if any man build upon This Foundation gold, silver, precious stones, wood, hay,
stubble; Every man's work shall be made manifest: for The Day Shall Declare it, because
it shall be revealed by fire; and the fire shall try every man's work of what sort it is.
If any man's work abide which he hath built Thereupon, he shall receive a reward.
If any man's work shall be burned, he shall suffer loss: but he himself Shall Be Saved;
yet so as by fire." (1 Corinthians 3:8-15 AV)
------------
And, precious friend(s), Please Be Very Richly Encouraged and Edified
In The Lord Jesus Christ and In His Precious Word Of Truth, Rightly
Divided:
Amen.

Why does the 1st "day" start 2 1/2 hours in?

Yom haRishon is the first hour of the twelve-hour civil calendar day, (Num 7:12), the hour of tribe Yhudah, which is the hour of praise because Yhudah means praise: this is the waking hour.

Yom Echad is the first hour of the sacred calendar day, and commences with the evening portion of the hour, as in the opening creation account, and the hours of the sacred calendar day are therefore offset by half an hour. Yom Echad is the morning oblation and first hour of prayer dividing the morning portion of the civil calendar day, the third hour of the civil calendar day.

The same happens with the midday hour of prayer: it divides the twelve-hour civil calendar day at the half, in the Tzohorim-midday hour. The same type of split then happens again with the Shabbat hour: it is the evening oblation and hour of prayer, which is from the bottom of the ninth hour to the bottom of the tenth hour of the civil calendar day, which divides the evening portion of the civil calendar day at exactly "between the evenings", that is, between the six evening hours of a twelve hour day. The seven hours of the sacred calendar day in the opening creation account, in the manner in which they are embedded into the twelve-hour civil calendar day of Num 7, actually quarter the civil calendar day into four portions containing three hours apiece.
