[Galatians 2:11-12 KJV] 11 But when Peter was come to Antioch, I withstood him to the face, because he was to be blamed. 12 For before that certain came from James, he did eat with the Gentiles: but when they were come, he withdrew and separated himself, fearing them which were of the circumcision.

Those that came from James are not readily identified other than they were Jews.

[Gal 2:13 KJV] 13 And the other Jews dissembled likewise with him; insomuch that Barnabas also was carried away with their dissimulation.

Who are the "other Jews" that dissembled (acted hypocritically) with Peter in not eating with the Gentiles?

It is not clear who these "other Jews" are but we can make a good case in saying they were Jews who believed Paul's gospel by considering what else Paul had to say. Paul said that Barnabas also was carried away. Barnabas was a Jew, a Levite according to Acts 4:36, who was in the church at Antioch (Acts 13:1) and could be considered to be among these "other Jews"; Barnabas and the "other Jews" were part of Paul's ministry (Acts 13:43 46 15:35 36 Galatians 2:9).

[Gal 2:14 KJV] 14 But when I saw that they walked not uprightly according to the truth of the gospel, I said unto Peter before [them] all, If thou, being a Jew, livest after the manner of Gentiles, and not as do the Jews, why compellest thou the Gentiles to live as do the Jews?

Paul was saying that Barnabas and the "other Jews" were not walking (behaving) according to the truth of the gospel by not eating with the Gentiles. What gospel was Paul speaking of? Paul was saying that Barnabas and the "other Jews" were not walking according to his gospel. Paul was not saying Peter was not walking according to his own gospel. Paul was not saying they both shared a common gospel. Paul was saying the Jews in his ministry were not walking according to his gospel.

Where do we find the bit about it being "Paul's Gospel"?

Paul uses the phrase “my gospel” three times in his epistles:

  1. Romans 2:16“In the day when God shall judge the secrets of men by Jesus Christ according to my gospel.”
  2. Romans 16:25“Now to him that is of power to stablish you according to my gospel, and the preaching of Jesus Christ…”
  3. 2 Timothy 2:8“Remember that Jesus Christ of the seed of David was raised from the dead according to my gospel.”

Where do we find the bit about it being "Paul's Gospel"?
You gave verses where he said it was his gospel

The death and resurrection could be found in the prophets and the psalms and Paul said in 1 Cor 15 1:4 it was according to the scriptures

Jesus said he shed his blood for "the Many" .................[Mat 26:28 KJV] 28 For this is my blood of the new testament, which is shed for many for the remission of sins..................the many are Israel

Paul writes Christ is savior for all not the many...................[1Ti 2:6 KJV] 6 Who gave himself a ransom for all, to be testified in due time.

Paul said Christ died for our sins not just Israel

Paul said Christ was raised for our justification not to just sit on David;s throne in the earthly kingdom as Peter preached.....................[Act 2:30, 37 KJV] 30 Therefore being a prophet, and knowing that God had sworn with an oath to him, that of the fruit of his loins, according to the flesh, he would raise up Christ to sit on his throne; ... 37 Now when they heard [this], they were pricked in their heart, and said unto Peter and to the rest of the apostles, Men [and] brethren, what shall we do?

Peter and the disciples only believed and preached the name of Jesus that Jesus was the Christ, the Son of God..............[Luk 24:47 KJV] 47 And that repentance and remission of sins should be preached in his name among all nations, beginning at Jerusalem.

Well what exactly is the issue since Paul did what he was commissioned to do?

Act 9:10-20 Now there was a certain disciple at Damascus named Ananias; and to him the Lord said in a vision, "Ananias." And he said, "Here I am, Lord." (11) So the Lord said to him, "Arise and go to the street called Straight, and inquire at the house of Judas for one called Saul of Tarsus, for behold, he is praying. (12) And in a vision he has seen a man named Ananias coming in and putting his hand on him, so that he might receive his sight." (13) Then Ananias answered, "Lord, I have heard from many about this man, how much harm he has done to Your saints in Jerusalem. (14) And here he has authority from the chief priests to bind all who call on Your name." (15) But the Lord said to him, "Go, for he is a chosen vessel of Mine to bear My name before Gentiles, kings, and the children of Israel. (16) For I will show him how many things he must suffer for My name's sake." (17) And Ananias went his way and entered the house; and laying his hands on him he said, "Brother Saul, the Lord Jesus, who appeared to you on the road as you came, has sent me that you may receive your sight and be filled with the Holy Spirit." Then I make the point that Paul was preaching and teaching what God intended for him to do.

Yes, it was quite a flip for Paul, who as Saul was persecuting Christians, to seek help from them and begin preaching Christ. That same zeal shows through in all his letters and the Book of Acts.
