Favorite Holiday Recipes

    I love the holiday season, and making special holiday dishes is one of the reasons. This is the only time of year I cook a turkey, make my Mema's cornbread dressing, and bake pumpkin pies. Also, my family loves eggnog, and I can't find it in the stores any other time of year.

    Here's my favorite simple pumpkin pie recipe. It's nothing out of the ordinary, but we enjoy it every year.

    PW's Pumpkin Pie

    1 15 oz. can pure pumpkin
    3/4 cup sugar
    2-3 tsp. of cinnamon (or to taste)
    1/2 tsp. sea salt
    2 eggs, slightly beaten
    1 12 oz. can evaporated milk

    I mix all ingredients but the milk with a whisk. Then I whisk 1/3 of the milk in at a time till well mixed. I pour this mixture into a refrigerator pie crust arranged in a 9 1/2 inch deep dish pie plate. (Of course, you can make your own crust or use a prepared one.)

    Bake in a preheated 425 F degree oven for 15 minutes. Turn temp down to 350 F degrees and bake another 40-50 minutes till a knife comes out clean. (If you don't like your crust too dark, you can put some foil over the crust when it's to your liking and continue baking.)

    We cool our pie in the refrigerator till cold (usually overnight) and serve it with a generous dollop of real whipped cream. (You can use the fake stuff, but the ingredients make me wonder what it does to my health....:eek:)

    She does like Tim Hortons' pumpkin flavored muffins! it's the season for them now... :)

    It's a Canadian chain of coffee shops that also sell cookies and muffins. They are also present in border US states such as NY.

    Up here Tim Horton's is a sort of national institution...

    (There was even a Tim Horton's Khandahar, Afghanistan (for the Canadian troops...)

    Sorry, no recipes. My wife is the recipe pursuer in my home. She makes pumpkin pies, always my favorite, for me, But me, I only eat them and quite willingly. If they have whipping cream or vanilla ice cream on top I will still accept them and eat them as well.
    Thank God for pumpkin pie.

    I would but, no, I would have to get it together as most of them are simply her own little changes to someone else's recipes. I guess that is what most cooks do, but many of them write them down. For the most part I know she does not. She learned to cook with me as the guinea pig, so I do know... I remember her first effort at making her own tortillas from scratch. They bounced well but I would not have wanted anyone else to eat them. I did eat them...LOL [We've been married now 46 years and she is now an excellent cook.]

    Ah, I see. I have recipes in my head too. I usually don't carefully measure most ingredients.

    Tortillas are not easy to make, belief it or not. An Hispanic friend of mine showed me how to make them years ago, but I've never mastered it. I think her secret was lard, which I won't use.

    She finally gave up on the tortillas... [but not on me]. She makes burritos and tacos, but buys the prepared tortillas for them.

    LOL, I'm sure she's glad that she didn't give up on you!

    I'm with her on the tortillas. I usually buy them, but occasionally, I make them with coconut oil. Man, are they good!

    When we have some rice left over from a meal, my daughter will put some with shredded cheese and a little ranch dressing on a folded flour tortilla and heat it in a skillet until the cheese is melted. It's really good.
