I don’t know very much about any of the leading candidates but I have heard Cardinal Sarah speak a few times and was impressed by what he said. I don’t have any insight on who will be elected but I’ll go with him for my guess.
If all I had was a lineup to choose from, Cardinal Parolin visually looks most like a Pope to me.
