Symbolically fish may have been clean while scaleless fish were unclean because of spiritual blindness such as the apostle Paul experienced when meeting Jesus on the road.

Fish, when caught are de-scaled, symbolically showing enlightenment.

A scaleless fish can not be de-scaled, so.they remain symbolically ignorant, and can not be enlightened. For example sharks are covered in a kind of teeth that can't be removed.

Or perhaps the scaleless nature of things such as catfish, sturgeon, or swordfish is a reference to willful sin. As these fish have no scales symbolically covering the eyes.

I’m not sure that the Jews knew exactly why certain foods were prohibited back in Bible times, but scientific research has uncovered many reasons why we today should consider our food choices more wisely than the mainstream media promotes in their advertising.

All processed foods are designed for shelf life, not nutritional value. Taste is more important than health benefits, and the commercial system makes sure that taste is catered for more that nutrition....hence the situation we have with chronic obesity in Western nations.....which is probably killing more people with food, than who die without it.

Sugar is one of the additives in food that feeds cancer and maybe the reason for its prevalence today, despite advances in medical science, cancer in its many forms continues to be epidemic. A lot of what we eat is loaded with refined sugar....more than we realize. Read the labels.

Leviathan, I believe is reference to a crocodile, an aquatic lizard with very large scales. (Psalm 104:25-26)
Being an aquatic air breather, his diet consists of both aquatic creatures and land animals who might come to the river to drink. For a creature of his size, his reflexes are lightning fast.

If leviathan was just a beast of the earth why would he spoken of in this manner here

Maybe you do not believe that he is just a beast of the earth or sea (so to speak)

Because it appears more like the LORD shows the invisible things (and the powers that be) in the very things that are made (or clearly seen). Even his eternal (unseen) power and Godhead can be understood by the things that are made (Romans 1:20)

I understand this prophecy to apply to both Satan the Devil and his wicked supporters on earth....those who knowingly or unknowingly provide that support.

An alternative rendering is....
“In that day Jehovah, with his hard and great and strong sword, will turn his attention to Leviathan, the gliding serpent, even to Leviathan, the crooked serpent, and he will certainly kill the sea monster that is in the sea.”
So many things are pictorial in the Bible....and this one gives us hope that the dragon slayer will achieve his goal, mentioned all the way back in Gen 3:15.
