Simon, one of the 12, was not Hebrew. See Matthew 10:4.
The "Canaanite" part isn't there to designate ethnicity. This was Simon the Zealot(Matt. 13:55, Luk. 6:15). The translators clearly did poor job at picking up on the fact that the Hebrew "kana" was supposed to be rendered as "Zealot" since Luk. 6:15 establishes the fact that it was a nickname.
