Moses met with him face to face and later saw him in his glory, but only his back parts

“And I will take away mine hand, and thou shalt see my back parts: but my face shall not be seen.” (Exodus 33:23)

Moses saw the TEMPORAL form of God’s back parts. Because remember this scripture:

“And he said, Go forth, and stand upon the mount before the LORD. And, behold, the LORD passed by, and a great and strong wind rent the mountains, and brake in pieces the rocks before the LORD; but the LORD was not in the wind: and after the wind an earthquake; but the LORD was not in the earthquake: And after the earthquake a fire; but the LORD was not in the fire: and after the fire a still small voice.” (1 Kings 19:11-12)

I don’t really know what kosher means. I know Hebrews eat lamb and fish.
They don't have milk and meat at the same meal because of the scripture that says you shall not boil a kid (lamb or goat) in its mother's milk

What is the Godhead?

The only thing about the Godhead that scripture speaks of, other than the fullness of it dwelling in Christ, is this:

“…we ought not to think that the Godhead is like unto gold, or silver, or stone, graven by art and man's device.” (Acts 17:29)

And I’m not interested in your imagination of what the Godhead is.

I don't think God intended for us to have to use a secret decoder ring to figure out His name.

He did when His people forgot Him, which if you actually study your Old Testament Bible history, you'll find that out, because the "house of Israel" (ten northern tribes) and the "house of Judah" (3 southern tribes of Jews) both fell away into idol worship and forgot Him. To the "house of Israel" He gave them a "bill of divorce" and scattered them until they became lost to themselves and to the world (Jeremiah 3:8; Hosea). To the Jews of the "house of Judah", He sent them captive to Babylon, and scattered the majority of them like He did Israel. Only a very small remnant of the tribes of Judah, Benjamin, and Levi returned to Jerusalem after their Babylon captivity (Ezra 1 & 2).

So yeah, God hid His face for a time when both houses forgot Him. But He put an Acrostic in one of His Books in The Old Testament in that time of their falling away. Obviously, that was to show He was still their God, and would eventually turn them back to Him. And would it be important that He showed that in an Acrostic for that era of their rebellion? Yes.

Deut 31:16-17
16 And the Lord said unto Moses, "Behold, thou shalt sleep with thy fathers; and this people will rise up, and go a whoring after the gods of the strangers of the land, whither they go to be among them, and will forsake Me, and break My covenant which I have made with them.

17 Then My anger shall be kindled against them in that day, and I will forsake them, and I will hide My face from them, and they shall be devoured, and many evils and troubles shall befall them; so that they will say in that day, 'Are not these evils come upon us, because our God is not among us?'"

The Amplified Bible takes both word meaning and context into account in order to accurately translate the original text from one language into another. The Amplified Bible does this through the use of explanatory alternate readings and amplifications to assist the reader in understanding what Scripture says. Multiple English word equivalents to each key Hebrew and Greek word clarify and amplify meanings. That's not adding to the word of God and could prove helpful for you. The KJV is not the only translation out there.

The KJV and other translations express the same meaning in Colossians 2:9.

Colossians 2:9 - For in him dwelleth all the fulness of the Godhead bodily. (KJV)
Colossians 2:9 - For in Him dwells all the fullness of the Godhead bodily. (NKJV)
Colossians 2:9 - For in Him all the fullness of Deity dwells in bodily form. (NASB)
Colossians 2:9 - For in Christ all the fullness of the Deity lives in bodily form. (NIV)
Colossians 2:9 - For in him, bodily, lives the fullness of all that God is. (CJB)

Eisegesis is fitting for you. It's no surprise that you don't believe that Jesus is God. No surprise at all.

The Amplified Bible does this through the use of explanatory alternate readings

“What thing soever I command you, observe to do it: thou shalt not add thereto, nor diminish from it.” (Deuteronomy 12:32)

The Devil did some “explanatory alternate readings” with Eve too…

“Now the serpent was more subtil than any beast of the field which the LORD God had made. And he said unto the woman, Yea, hath God said, Ye shall not eat of every tree of the garden?” (Genesis 3:1)
