I am making my buffalo dish...

8 pounds buffalo burger grilled
4 jars Classico red pepper spaghetti sauce
8 jars tomato paste
A lot of green peppers
A lot of onions

I can either make buffalo manwhich or buffalo spaghetti with this recipe... Very good!

I don't really have much of a sweet tooth but I love making chocolate eclairs or cream puffs using the same recipe. They are easy to make from scratch and tastes yummy..

Pastry
1 cup water
75g butter
150g flour
2 tsp caster sugar
a few drops of Vanilla
4 eggs

Preheat oven to 190 degrees C. Position racks in three levels. Line trays with baking paper.

Bring butter and water to the boil, quickly add flour and beat until the mixture leaves the sides of the sauce pan. Remove from the heat, add sugar and vanilla, then beat in eggs one at a time.

Place dough into a piping bag (or plastic bag with a corner snipped off) and pipe about 11cm in length onto trays, leaving space between each thick finger. Bake for 15-20 minutes, but check regularly. Halfway through cooking rotate the trays to ensure even cooking. They are done when they are golden brown, look dry and feel crisp (not soft).

Fill with piped or spoon cream and top with melted chocolate or buttons.

I had streaky bacon and eggs for tea...then I had it again for breakfast! ;) I like streaky bacon better than other cuts...it's so yummy!

Wife's at the coast so I'm feelin a bit lazy, had a tub of lasagne, caramel cupcakes and coke.
