The Law of Moses is not the whole law of God. In Genesis 1:14 we see the first instance of the laws being given to us by the sun and moon allowing us to calculate when the holy days are. The first sacrifice for sin is Genesis 3:21, when God clothed them with the skin of an animal. You need to acknowledge that Genesis is the only book of the Bible that covers over 3,000 years and it does not have a lot of detail for any of that time or it would be much larger than the rest of the book combined.
In Genesis we see another sacrifice and we have no idea of how many sacrifices were before this time or how many after this time nor how many years were involved. Genesis 4:2 states that able kept sheep and in 4:4 he sacrifices a sheep to the Lord. Thus we know that sacrifices were from the beginning of time and Moses was over 3,000 years later in history. We must also ask why he sacrificed to the Lord. If it were not commanded, would Cain’s sacrifice have been rejected, as free will offerings have a different set of rules? The main reason for his sacrifice to be rejected is it did not fulfill the requirements for a commanded sacrifice.
In 7:2 we see a differentiation between clean and unclean animals, thus the food laws were in effect long before Leviticus 11. In 7:8 we also see a difference between clean and unclean. In Genesis 8:20 Noah made an offering of only clean animals. We ask why he made an offering and was it commanded. There were daily sacrifices for every day of the week, which were not part of the sacrificial laws and existed long before the sacrificial laws were enacted to allow Israel to have their sins covered. Remember they were in Egypt for 400 years under Egyptian rule and exposed to their gods and way of life and there were Egyptians who came out with them who were never exposed to the laws of God. Because of the great works of God some of the Egyptians were so impressed that they joined the Israelites upon their leaving.

This is the first mention of a holy day or feast to be kept.

I acknowledge that GOd told us exactly what He wanted us to know in Genesis.

I also acknowledge that even thought Jesus ministered for 3 years (not 3,000 years) that the world could not hold all the books that could be written about Him.

Joh 21:25 And there are also many other things which Jesus did, the which, if they should be written every one, I suppose that even the world itself could not contain the books that should be written. Amen.

Yes, we don't have any idea and this is a good time to bring up 1 Cor 4:6 to you.

Paul came out and told the Corinthians that they should learn “not to go beyond what is written” (1 Cor 4:6). Stay with the text, don’t go any further than it goes. Don’t speculate, don’t elaborate, don’t fabricate, don’t extrapolate from what is not affirmed nor taught.

If it is not written, don't fabricate something to support your views. I mean, we all speculate a bit, but we can't turn our speculations into "Thus saith the Lord".

Paul violated his own rule when he took the story of Sarah and Hagar and turned it into an allegory. Jesus also took the law and applied it in different contexts, e.g. the law states not to go back for what is missed during the harvest, Jesus takes this law and applies it to salvation by stating that those who turn back aren't fit for the kingdom of heaven. The law is applicable in all aspects of our lives not just those illustrated in scripture.
