Since Christian's & the Jewish people do not have any surviving manuscripts dating 2 the prophets themselves. Since the original language of the Jewish & Greek people's is not the exact language that the scriptures are written in today, how can anyone be absolutely sure they are receiving the correct information?

Ah an argument that takes no account of how historians and linguists work or of what has been discovered by them.

For example from wiki:-
the oldest complete copy of the Book of Isaiah, being approximately 1000 years older than the oldest Hebrew manuscripts known before the scrolls' discovery. 1QIsaa is also notable in being the only scroll from the Qumran Caves to be preserved almost in its entirety.

When compared the difference between the two texts was minor.

The evidence supports the accuracy of the bible.

My understanding has been (because I was taught), scripture went from Hebrew to Greek to Latin to English. That's alot of translating.
Then, several interpretations. Even if these translations are close, if not exact, the meaning of words changes through time.

You have pinpointed why Scripture cannot be Word imo, but i would suggest that Paul's test everything, and keep what is good would cover your bases there? The Bible contains a lot of mythology, and many if not most of the stories have been lifted from previous sources, the recurring Twin theme from Romulus and Remus, the virgin will be with child an obvious (to the contemporaries anyway) ref to Athena, etc?
