We know this because Jews, who wrote the entire Bible, reject the trinity to this day.
'Jews' to this day reject the NT. 'Jews' to this day reject Jesus Christ as the Messiah. 'Jews' to this day discount Isaiah 53. 'Jews' to this day reject the time prophecies of Daniel 9, going so far as to place a curse upon those who try to calculate the times therein. So, pointing to the 'Jews' as the arbiters of truth is to reject the testimony of scripture itself. It turns from the Book (Bible) to man.
