Seems like you've got to come up with longer and more complicated explanations to make this all work. The simplest explanation works the best though. When you say they wouldn't have been able to see him, that simply doesn't fly. The bible is full of examples of people seeing angels, demons, etc. His disciples see a complete stranger in the flesh, and BAM, they suddenly see Christ. That's Christ's own teaching coming alive right in front of them. They see Moses and Elijah as well so we know they don't have to be in the flesh to be seen.
