Eventually I will get well enough to have chili dogs.
I've had a few days where I didn't feel well and the only thing I could eat was veggies so I totally understand although I'm not sure if I've had covid yet. When covid first hit Washington state I came down with bronchitis but wouldn't let them test me for covid cause I didn't want something shoved up my nose. That was back in the day when it was optional.

I could tell this is Covid because I have the nasty antibody rash. I had Covid in 2020 that punched me in the gut. I was sick for 9 days with it - prisoner in the bathroom. Then I got the rash which sent me to the doctor. They said it was Covid.

I've had nothing like that, crossing my fingers now and knocking on wood. And all the obsessive things to ward off evil spirits

Coffee maybe my best snack with milk. Only thing that comes to mind right now. I don't keep a lot of chips and things in the house for times like this. I could get some cheese cubes. A bit tired too. If I move little man may wake up again. I think he just wanted a drink cuz he is back out again.

Earlier, I made keto pancakes. They turned out nice and fluffy.
Some of the (mostly organic and non-gmo) ingredients I used were ....

*coconut flour
*almond flour
*lupin flour
*King Arthur brand keto wheat flour blend

*cinnamon
*hemp seeds (for protein, fiber, and omega 3's & 6's)

*Erythritol/stevia to taste (for sweetness)
*non-aluminum baking soda
*mineral salt

*pasture raised eggs
*greek yogurt
*heavy cream
*coconut milk

*vanilla extract
*olive oil

I use a keto friendly pancake syrup. But I ran low, so I made some of my own (maple-toffee-butter flavored) and it turned out to be much tastier and thicker than the store bought kind.

This is some of the ingredients I used.

And I drank some of this keto-friendly milk. It is filtered to remove the carbs (sugars). Tastes good!

We're having soda bread with smoked kippers and poached* eggs for breakfast. I have never had kippers so no idea how that will be.

After that I have to make two batches of kimchi, one cucumber and one napa cabbage.

Then another loaf of bread (I hope I can do more than one at a time or it will be harder on me throughout the week) and maybe if I can, crackers.

And then fried rice with ramen eggs I made last night.

Gonna be a long day of prepping and laundry

I love kimchi - and my wife thinks I'm crazy for doing so.
