So in the new heaven and earth, there will still be death?
If the scripture stated an infant dies at one trillion years would that be more helpful?

Your suggestion that its literal death is unfounded, it's explaining the eternal New Heaven, Earth,Jerusalem, the parallel teaching is in Revelation 21:1-5 no more death, the former is passed away, no more crying etc (Eternal)

Verse 20 below describes the eternal, as the infant and old will be the same, dying 100 year old isnt literal as you suggest

If you have a problem understanding the reading, refer back to verse 17 that states

(For, Behold I Create New Heavens And A New Earth)

17 For, behold, I create new heavens and a new earth: and the former shall not be remembered, nor come into mind.

I think we all make a mistake when trying to piece together prophecy and it’s akin to if we were to try to mash together Isaiah 61, verse 2 into one event/timeframe. We don’t know where the stops are. God does, but we don’t. We don’t know where one timeframe being spoken of stops and another timeframe starts. And sometimes, if our mind can’t make sense of it, we argue over which thing is correct, just like they did in the OT times - read for yourself and see that no prophet comes out of Galilee!

But then there are those who think it’s all symbolic and NONE of prophecy will literally happen. Even though God said it will all happen just like He told the prophets.

Yes Isaiah 65:17-19 & Revelation 21:1-5 represents the very same New Heaven, Earth, Jerusalem

And Revelation 21:4 below clearly teaches you (There Shall Be No More Death) scripture interprets itself before your eyes, and the infant dying a hundred years isn't literal, but represents eternal in the New Heaven, Earth, Jerusalem

So we know that there was no information technology at this time, so was Jesus speaking to the whole world or is the word world a reference to the Jews of that time?

In John 18 verse 20 Jesus Himself says He spoke openly to the world.

I do wish you’d help me solve the mystery as to who the world is?
